Perri's Pizza Dough

Below is a pizza dough recipe handed down by Joe Perri, a former pizza maker at Pee-Wee's Pizzeria when it was open decades ago in the 1960s on 20th St. and Pine Avenue in Niagara Falls, NY. This recipe may have been adapted since the Pee-Wee days, but I have used it ever since it was passed to me and I've never had a bad tray since.

Ingredients

  • 1.5 cups warm water (110F)

  • 2 tsp yeast

  • 4+ cups flour

  • 2 tsp olive oil

Directions

  • Dissolve yeast in warm water
  • Mix in 1 cup of flour
  • Add olive oil
  • Add 2 cups of flour
  • Mix well. Add enough flour to make soft dough, about 1 more cup
  • Knead dough
  • Put in bowl, rub with olive oil, let rise for 1 hour
  • Make pizza
