Perri's Pizza Dough
Cuisine: ItalianBelow is a pizza dough recipe handed down by Joe Perri, a former pizza maker at Pee-Wee's Pizzeria when it was open decades ago in the 1960s on 20th St. and Pine Avenue in Niagara Falls, NY. This recipe may have been adapted since the Pee-Wee days, but I have used it ever since it was passed to me and I've never had a bad tray since.
Ingredients
1.5 cups warm water (110F)
2 tsp yeast
4+ cups flour
2 tsp olive oil
Directions
- Dissolve yeast in warm water
- Mix in 1 cup of flour
- Add olive oil
- Add 2 cups of flour
- Mix well. Add enough flour to make soft dough, about 1 more cup
- Knead dough
- Put in bowl, rub with olive oil, let rise for 1 hour
- Make pizza
